how to pour beer the right way

Contrary to what a lot of people think, the foam (head) at the top of your beer isn’t a rip off or a bad pour! That’s where all the flavor and aroma shines! If you ever feel bloated after drinking beer and eating, it’s because the carbonation hasn’t been broken out during the pour, it’s being broken out in your stomach.

Don’t pour straight down into the glass as it will create a vacuum and accelerates nucleation in the glass, causing too many bubbles.

Instead, tilt the glass 45 degrees and pour the beer slowly. As the beer rises to the top, you want to accelerate the nucleation by straightening out the glass upright. At this point you want to start pouring in the center which pulls more oxygen into the beer, creating bubbles.

An ideal head should be around an inch to an inch and a half.

 

 serving the guests

It is proper to serve beer in a glass rather than just from the can/bottle. You won’t get the proper aromas and flavors straight from the bottle! Here are the typical steps to serving beer to the guest.

Ensure to open the top of the can/bottle beer before approaching to the guest and have a glass prepared for each beer ordered.

Place the glass down on the right hand side of the guest.

Ask the guest politely, “Would you like me to pour your beer for you?” If they say no, place the beer can/bottle on the right hand side of the glass at a 3:00 position. If the guest says yes, proceed with the following steps.

Begin to pour the beer very slowly from the right side of the guest (ensure that the can/bottle does not touch the rim of the glass).

Stop pouring beer when the glass is already full. There should only be approximately 2-3 cm volume of head in the glass. If there is some remaining beer in the can/bottle, place it on the right hand side of the glass at a 3:00 position.

Remove empty can/bottle with your right hand from the guest’s right hand side and return it to the back-of-house.

When the beer glass has only 1/3 of beer remaining, politely ask the guest if he'/she would care for another beer.
