Shio translates to “salt” in the Japanese language and was used to preserve food when there were no refrigerators. More commonly used today, salt is an agent to enhance and elevate a flavor. This speaks true to who and what we stand for. To preserve the integrity of our ingredients, our work ethic, and our pursuit of personal growth; to elevate the experience, the community, and most importantly, you! philosophy
Shio food expands the Japanese palate and techniques and introduces flavors and influences from around the world. Our signature menu offerings include hot and cool tastings, makimono (rolled sushi), yakimono (grilled meat), tempura and, of course, sushi and sashimi. In the Japanese tradition, there are no ‘appetizers’ or ‘entrees,’ but rather each meal is comprised of a progression of small plates, meant to be shared and constructed in such a way that each bite builds upon the last. Intriguing and surprising combination of textures and flavors are a signature component of every menu item.
sushi
Sushi was first created in the Kanto region of Japan during the Edo period in the 17th century. Salt and vinegar were used to essentially pickle the fish, which was necessary due to lack of refrigeration at that time. Only later did sushi spread to other regions of the Japanese colony, with each adding their own new take or style to the cuisine. Sushi later came to the West via California in the 20th century, where it was transformed again with new additions such as the sushi roll. Today, people from all over the globe, each adding local ideas and ingredients, perform the delicate and skilled art of making sushi.

Regarding offering beverages to enhance the dining experience Shio strives to provide offerings which showcase the food. At a restaurant, the food is the star. We want to help our guest make selections which marry the experience of food and drink. In doing so, we hope to give them a little bit of an education, without them even knowing. Through knowledgeable and thoughtful beverage service, we are able to present new things to people, without any pretension coming into the experience. Our beer, wine, and sake lists are widely diverse and we strive to represent the globe and the entire culture of wine. Just as our kitchen and food are diverse, the beverage program incorporates as many cultures and passions as possible to enhance the experience.

required certifications
food handler certification
As a Shio employee, you are required to obtain a state approved food handlers permit. This certification must be registered with the City of Wichita Falls, as required by law. The certification is around $10 for the course and is good for up to two years. The following websites below have links available. It is your responsibility to bring proof of certification to your management team no later than four weeks after your hire date. You will not be allowed to accrue tips or work a solo shift without this.
TABC alcohol certification
As an alcoholic beverage server or manager, you are required to obtain a Texas Alcoholic Beverage Commission certification. The certification is around $20 for the course and is valid for two years from the date of the course. The following websites below have links available. It is your responsibility to bring proof of certification to your management team no later than four weeks after your hire date. You will not be allowed to accrue tips or work a solo shift without this.
Shifts & Scheduling
We use 7SHIFTS as our scheduling and messaging tool. This is a free service for employees to use and all employees will have a log-in.
Our work week is Monday through Saturday, and we try to post schedules up to a month in advance. Because of this, we do not honor requests off. Our staff is very flexible at swapping shifts, so if you need to take a specific day off, there are always options amongst your peers. Any requests for extended time off must be approved by a manager 30 days in advance, so please talk to a manager about any upcoming vacations or requests longer than two weeks.
Once the schedule is posted, it is every employee’s responsibility to know their own schedule. Any schedule changes or swaps must occur in 7SHIFTS and be approved by the FOH Manager before they are valid. If you have any questions or concerns about your schedule, please see Alex Chon.

When you’re ready to fly
We understand that you have dreams and aspirations. When you’re ready to take those on and depart from us, we ask that you provide a two-week notice so that we have ample time to fill the shoes and experience that you’ve graced us with. We hope that you leave us equipped and ready to take on the world.

After you have completed reading the manual, ask any questions that you may have. It should be the goal of each reader not only to know the rules laid out henceforth but also to understand the reasoning behind them.
